Yes, it is warm outside. Yes, onions are nowadays more likely to show-up – sliced and peeled – on a hamburger. But, there is something about a truly inspired bowl of onion soup to focus the senses. Long-caramelized onions, garni, veal and beef stock, stale bread, and two layers (yes…two layers) of Gruyere to finish.
